Fall recipe: Vegan Lentil Soup

We are fully embracing fall with this easy vegan Lentil soup. Cozy, flavorful, simple to make & just so "fall". 

 

INGREDIENTS: 

1tblspn Olive Oil 

1 Leek, trimmed & sliced 

1/2 yellow Onion, diced 

3 cloves Garlic, minced 

2 Bay Leaves 

2 sprigs Thyme 

 

2 Stalks Celery, sliced 

2 Carrots, diced 

2c uncooked whole green Lentils 

8c vegetable broth

1tblspn Cumin 

Salt + Pepper to taste 

Fresh parsley, chopped 

 

METHOD:

Heat oil in a soup pot & add Garlic, Onion + Leeks. Stir till aromatic, about 2 min. 

Add Celery, Carrot, Bay Leaves + Thyme sprigs & stir 2 more min. Add dry lentils & stir to combine. Add veggie stalk, Cumin, Salt + Pepper. Cover and turn to a low simmer for roughly 15 min. Check & stir at the 10 min mark. 

Enjoy with crusty bread, a sprinkle of Parsley + people you love.

*serves 6 

You could also add greens, potatoes or sausage (if you are a meat eater) and use chicken broth if you wanted! Get creative and see what you like best!
