Green Shakshuka Recipe
This recipe quickly became a weekly staple in our house. I make it for breakfast AND have made a dinner version by swapping out the toppings. Its FULL of healthy greens, nutrient dense fresh herbs & healthy fats. If ever there was a "detox" meal, this is it.
SAUCE INGREDIENTS:
1 bunch Cilantro, chopped with stems
1 bunch Parsley, chopped with stems
1 bunch Basil, Chopped
2 Serrano Peppers, de seeded
1/2 Tspn Salt
1/3 C Water
1/2 C Olive Oil
BASE INGREDIENTS:
2 Heads Swiss chard or Rainbow Chard, sliced into ribbons
1 Small Onion, sliced
2 Small Leeks, sliced thinly
4 Cloves Garlic, minced
Drizzle Olive Oil
3 Eggs
TOPPINGS:
Radishes, sliced thinly
Fresh Mint, chopped
Fresh Basil, Chopped
Avocado, sliced
Feta Cheese, crumbled (optional)
METHOD:
Heat a large skillet on med heat & drizzle Olive Oil. Add minced Garlic, Onion & Leeks cooking till transparent & aromatic. About 5 min.
While that’s cooking put all sauce ingredients into a blender, blend till smooth. Add Chard ribbons to skillet and mix. Cook till wilted, about 2-3 min & add the sauce to the skillet. Mix thoroughly till well incorporated.
Turn heat to low. Using the back of a spoon create 3-4 “wells” in the mixture. Crack eggs into the “wells”, cover and let cook 5-7 min depending on how you like your Eggs cooked.
Top with toppings of choice & ENJOY!!
