Vegan Cacio E Pepe
-1/2 lb Spaghetti
-1/2 C Vegan Cashew Parmesan: ( 3/4 C Cashews / 3/4 tsp Salt / 3 heaping Tblspn Nutritional Yeast / 1/4 tsp Garlic Powder pulse ingredients in a food processor till grainy)
-1/2 tspn fresh ground Pepper
-Red Chili flakes (optional
-1/2 Reserved pasta water
Cook Pasta according to package instructions. *important* save 1/2 c pasta water before you strain your pasta.
Leaving your noodles aside, drizzle 2-3 tablespoons Olive Oil in your pasta pot. Add noodles & toss. Add Cashew Parmesan + Black Pepper & some pasta water and toss well. More pasta water = creamier pasta. Play with the consistency till you get it to your liking & serve immediately.
Top with more cheese, pepper & chili flakes if you like it spicy.
